Rum & Coconut Cream Molded Chocolates--Happy Mother's Day!

Mother's Day is right around the corner and, given that I have the best mother on the planet, and given that my mother hinted a few days ago that she'd like some chocolates on her special day and liked the sound of coconut and rum in those chocolates, I spent a few hours last night making these rum and coconut cream molded beauties.
The guts are made of white chocolate, cream, toasted coconut, butter, Malibu Rum and Myers's Original Dark Rum. The shell is a blend of Valrhona Equitoriale 55% Cocoa and Valrhona Grand Cru Guanaja 70% Cocoa. These are pretty damn good, if you're into booze and chocolate and coconut . . . and they'll be in the mail this afternoon.

Michelle, I made the ganache with the following:
Heat the cream and corn syrup until boiling, then pour into a bowl over the chopped white chocolate. When the temperature is down to 95°F, give it a stir, then add butter, rum and coconut and stir again to fully incorporate. You need to let the ganache sit for about an hour, until it's at room temperature.

Thank you all for your sweet words! My mother loved the chocolates. I'm just trying to make up for the way I tortured her when I was an adolescent. Chocolates are the least I can do!

Collaboration is already on my calendar for June 22. I'm sure I'll be ready to play with chocolate again by then, if not before. But we should talk or email in the week or two leading up to our collaboration date so I have some idea of what you want to do. We'll make you some of the best wedding chocolates of all time! And I'll take a photo next weekend of my brother's wedding chocolates, to see if you and your fiance might want similar boxes, etc. We'll get you all set up!
