Lemon Slice & Beet Juice

Have you ever had an occasion where the garnish on the dish you prepared turned out better than the food itself?  It's definitely not a good thing, but it happened to me last night.  I envisioned a pretty plate of baked halibut sitting atop a bed of steamed beet greens, surrounded by and drizzled with pureed roasted beets and a yogurt/horseradish mix on a white plate.  It looked sooooo good in my mind's eye.  But it looked a mess to my actual eyes when I plated it up.  The fresh goat milk yogurt I used was too runny to look good.  Drizzling the pureed beets and the yogurt/horseradish mix on top of the delicate baked halibut was a mistake.  The whole thing was just a mess.  It tasted decent . . . not great . . . but definitely edible . . . so my efforts were not completely wasted.  I got a meal out of the deal.

And when I was cleaning up my mess I noticed the beet juice soaked lemon slice pictured above.  A silver lining in the cloudy meal.  I didn't intend to soak the lemon slice in beet juice.  It just fell over, into the pureed beets, while I was eating.  Serendipity.

      I'm sure it would have . . . it's hard to beat Greek yogurt . . . or Greek anything, for that matter . . . right?  But you know me . . . trying to support the local yogurt makers!  The stuff I have is really delicious . . . just not thick enough for last night's application.  Live and learn.

      I think you're on to something, Julie.  How cool would it be to color some lemon slices and then actually candy them . . . before using them as a coctail garnish . . . or just eating them as candy.  I may have to try that.
