Recycled Roasted Root Vegetable Soup

Does this dish look familiar?  It's been a busy week at work and, consequently, I haven't had a whole lot of energy for evening cooking adventures.  It happens to us all, right?  Well . . . one of my favorite food bloggers, Jennifer Hess over at Last Night's Dinner, regularly features posts categorized as "When Life Hands You Leftovers," in which she recycles leftovers into new dishes.  If she gets away with it, I figure I can too.  So I took the whole and pureed roasted root vegetables leftover from the weekend, added some chicken stock, blended and then heated my new dish—soup!  I added some kale chips I had made over the weekend after reading about them on a blog called 28 Cooks, drizzled the soup with some yogurt and . . . voilĂ  . . . I had a new meal perfect for a cold winter night!  (I should add that every ingredient in this dish, except for some olive oil, salt and pepper, was purchased at the Dupont Circle Farmers Market. I don't want to come across as self-righteous. I eat plenty of food every week that's not locally sourced. But I do want to provide a little encouragement that, even in February, it's possible to make some delicious dishes with local ingredients.)

      It's romanesco . . . a funky relative of cauliflower and brocolli . . . you can treat it as you would either of those . . . maybe just steam it to check it out for the first time.  Enjoy the soup and happy holidays!
